Once in a while, our team comes across a coffee so good that we just have to buy it, no matter the cost. This is that kind of coffee. From the high hills of Costa Rica's West Valley comes a spectacular harvest of Gesha from Volcan Azul.
For this lot, carefully selected, perfectly ripe cherries were fermented in an anaerobic (oxygen-free) environment to provide additional levels of control over the process to ensure the highest quality. These cherries were then dried whole—a method known as the "natural process"—which imparts more sugars and fruity aromatic compounds to the beans.
Finally, the coffee was vacuum sealed at origin to retain the freshness, right up until were ready to begin roasting it. Speaking of roasting, we have a very limited supply of this coffee—only enough for a few small batches. As such, we’re offering it as a pre-sale. Today, we’re making 45 bags available, which will be roasted next week. Afterward, we’ll do a second run with any unsold pre-sale coffee, plus the remaining beans.

Volcán Azul, owned by Alejo Castro, is a distinguished coffee farm situated in the highlands of Costa Rica. Alejo, whose family boasts a long-standing tradition in coffee cultivation, has committed himself to enhancing the farm’s quality and environmental stewardship. Under his leadership, Volcán Azul has gained recognition for its meticulous approach to coffee production, incorporating advanced drying and processing techniques as well as the cultivation of unique coffee varieties.
In 2017, Volcán Azul was honored with the Presidential Award at the Cup of Excellence for their Gesha lot. Since then, they have participated in other Cups of Excellence, earning a total of five international awards. Alejo’s careful cultivation and dedication to preserving this rare variety’s heritage have solidified the farm’s reputation for producing some of the finest Gesha in the specialty coffee market.
